Named vegetables with the highest nitrate content

There are three groups of vegetables and fruits, which accumulates the highest amount of nitrates. This was told by nutritionist Natalia Samoilenko.

According to her, the first group, or “nitrate” Champions – beets, parsley, dill, spinach, radishes, green onions, watermelon, melon.

The second group includes cabbage, zucchini, carrot, pumpkin, radish, carrot. Third group: tomatoes, cucumbers, potatoes, onions, sorrel, beans, fruits, berries.

To reduce the effect of harmful substances, the nutritionist advises to properly clean vegetables. The fact that nitric acid salts in vegetables are distributed unevenly.

The beets in it – the peel, the place of attachment of leaves, heartwood and the tip of the root. In the green most of all harmful substances accumulated in the stems and less in leaves. In potatoes the nitrates are closer to the skin, in the cabbage harmful substances accumulate in the stalk, with thick stalks and in the upper leaves. In cucumber, the zucchini in the skin and closer to the stalk, carrots – in the core and at the top and bottom of the root vegetable, the tomato is closer to the stem.

In addition, if the tomatoes contain huge amounts of nitrates, the walls inside the vegetable become hard and yellow. Such fruit is not the best.
